Apple Cake

Ingredients:-

7 inch square cake tin, greased with the bottom lined

Oven Gas 4 for 40 minutes, reduce to Gas 3 for a further 40 minutes

Mix all ingredients below together at high speed

8 oz Self Raising flour
1 tsp baking powder
2 tsps mixed spice
8 oz butter/marg
6 oz caster sugar
2 eggs
6 oz apple sauce

Thinly slice an apple, and after putting mixture into baking tin, place in slices and bake

Glaze whilst warm with honey and a pinch of mixed spice (approx 4 tablespoons honey and 1 tsp mixed spice)

The mixture can be divided between 2 loaf tins, and the baking time reduced.
